Bacon Ceddar Muffins

Here is a recipe I saw recently online and thought I would give it a try. First you fry 10 pieces of bacon reserving the bacon grease in the pan. Allow the bacon to cool and then chop into small dice.


Chop one medium onion.


And saute' it in the remaining bacon grease until just browning on the edges..


Put 2 cups of flour in the bowl of a mixer.


Add a heaping teaspoon of baking powder...


and 3/4 teaspoon of salt.


Chop 1/4 cup of crisco into bits and add these to the flour mixture.


Remove onions from pan and allow to cool.


Whisk the crisco into the flour mixture until tiny peas form.

In a separate container, mix 10 tablespoons of buttermilk (or regular milk) with 4 tablespoons of oil and one egg.


Put the paddle on your mixer (or you can do this with a wooden spoon) and pour the milk mixture into the flour mix and and mix until just combines. Do not over mix.


When it looks like this...


Add a cup of shredded cheese. I used cheddar and monterey jack.


Toss in the onions....


And the bacon.


Mix just until combined.


Spry or grease a muffin tin thoroughly.


I use an ice cream scoop for equal portions. Scoop batter into each container.


Bake at 375 degrees for about 25 minutes. They should be turning golden and crisp on the top.


These are a breakfast on their own. They sure smell good!!!

Sounds like something really tasty! But at first I reacted quite strong at the headline of this peace. You see a muffin in Sweden is the same thing as You call a cup cake. I couldn´t understand what You were mixing in the cup cakes :-) :-)

They look great may I ask what is Crisco? Crisco here is a liquid oil, so is crisco a solidified fat over there?
