My arborist is here today doing slash and burn along with the 'Texas Chain Saw Massacre', so I am quite busy kissing goodbye a lot of beloved trees and shrubs. 'Sophie's Choice' took place so I could save some of the rare species, however some healthy ones had to be sacrificed. It's been a rough morning. So while I am out there playing King Solomon, here is a quick pad thai recipe.
In a heavy pan over medium heat I combined 1 cup of creamy peanut butter, a can of coconut milk, the juice of 2 limes, a tsp. of tamarind paste, 1 tsp. of fish sauce, 2 T. rice wine, 2T. soy sauce, 2 tsp. minced garlic and a knob of grated ginger. Heat this slowly just until creamy.
I pressed a block of tofu. After the liquid drained I cut it into small cubes.
Lightly saute a sliced onion in a combination of sesame oil and canola oil. Don't overcook this.
After removing the onions, add the tofu and fry quickly.
I missed a few pics. Boil some noodles, I used linguine and add some thinly sliced carrots. Quickly saute a pound of shrimp in some sesame oil and canola. Put all of this in a bowl.
Pour the peanut sauce over all of it.
Sprinkle in some sliced basil. Mix gently to combine.
Serve with lime wedges.

Not fun to have to cut down trees, but if one has to one has to.It makes place for new plants so that´s a good thing :-)

I'm so sorry to hear that you are losing trees and shrubs. It looked so lush and beautiful. I'd hate to have to be the one who decides which ones get cut. No wonder your morning has been rough.
And so sorry about the trees, I feel your pain since I'm a tree lover myself.
