Jungle Bars

Mmmmm...banana bars!

Place 1/2 cup of softened butter in the bowl of your mixer. Add 1/2 cup of sugar and beat until fluffy.

Add 2 beaten eggs, 1 cup of sour cream and 1 tsp. of vanilla extract.

Add 1 tsp. of baking soda.

Then add 2 cups of flour.

Beat in 1 cup of mashed bananas and blend until smooth.

Pour the batter into a 9x13 baking pan which has been sprayed with cooking spray and lined with parchment paper.

Bake in a 350 degree oven for approximately 25 minutes until a toothpick inserted in the middle comes out clean. It should spring back when you touch it. Allow it to cool.

Put 1 package of cream cheese in your mixing bowl and 1/2 cup of softened butter. Add 2 tsp. of vanilla and beat until smooth. Mix in 4 cups of powdered sugar and beat until combined. Spread on the cooled cake.

Refrigerate until chilled and cut into bars.

That one is a must try! I do get lots of bananas cheap from the grocery store since they can´t sell them when they turn towards brown :-)
Have a great day now!
