The Best Salisbury Steak You Will Ever Taste

When I was a kid, Salisbury steak was a very popular dish. It was served in all of the restaurants at the time. As it morphed into dinner at home it became a pounded to death piece of chewy beef that sent it into the culinary archives.

This recipe resurrects it once and forever!


Start by placing 2 pounds of ground beef in a large bowl.


Dice up a whole bunch of fresh parsley.


Add it all to the beef.


Finely dice a large onion and add it to the bowl.


Add salt and freshly cracked black pepper.


Then mix it all together.


Shape the mix into small oval patties about one inch thick.


Place some flour in a shallow bowl and coat all sides of the patties with the flour.


Just roll them around in the flour and set them aside


While they are resting, heat some olive oil in the bottom of a heavy pot.


Place the patties in the hot oil and cook for about 4 minutes until browned. Move them around a bit to keep them from sticking.


Turn them and repeat on the other side.


Remove them from the heat and set them aside.


Peel 3 large onions.


Slice them into medium slices.


This is what you should have left in the pot after the browning. This is where a lot of the flavor for the sauce comes from.


Add the sliced onions and cook over medium heat.


Sprinkle the onions with 3 teaspoons of sugar.


Sprinkle in some granulated garlic. When I want the garlic to spread completely through the sauce I often use dried granulated garlic instead of chopped fresh garlic. Plus this is a quick cooking recipe which would not allow the flavor of fresh garlic to develop.


Then you need to add 3 tablespoons of tomato paste. I keep mine frozen when I have not quite finished a whole can and then I just cut some off as I need it.


Just as the onions begin to soften a bit you add 5 cups of beef stock. You can also add 4 cups of stock and a cup of red wine but sadly I had none, so I used all stock.


Place the meat patties back in the sauce.


Bring to a slight boil then lower to a simmer and cook for 20 minutes.


Take a nice chewy bread and cut it into serving size pieces. Spread it with some garlic butter and sprinkle on some Parmesan cheese.




I added some flaked Asiago cheese too.


Broil them until golden.


Sit a piece of the bread on a shallow soup bowl. Place a patty on top and ladle the onions and sauce over it. This is so good you could serve it to dinner guests. Any former idea you had of Salisbury steak will be banished forever.

This recipe makes about a dozen patties so it could easily be cut in half.

This was one of my father's favorite meals.
My grandmother used to do something similar when I was a young boy. Sooo delicious! But she would never use olive oil and garlic though :-) I think my grandfather would have had a heart attack then :-) :-) :-)

Fantastic giveaway. I have to say, you are my favorite escape. Now that I'm living alone, I don't take time to cook for myself at all. I kind of miss it. I never thought I would because my husband had very particular tastes and needs and so I never got to eat what I want. I want that--looks sooooo good. I might just pull out the saucepan and the spoons and knives and get to work.
