
Don't throw that turkey carcass out yet! Make some delicious soup with it!

Melt 2 sticks of butter in a heavy pot.

Finely dice 2 medium onions.

Saute' them in the butter.

Dice 4 large carrots.

Add them to the onions.

Dice 4 large stalks of celery and add them to the pot. I am still using the celery from my garden.

Saute' these for a few minutes. You still want them to have a bit of crunch. Set the pot aside.

Remove as much meat as you can from the turkey carcass and place it in a large heavy pot and fill it with water.

Add a couple large onions cut in half. You can leave the skins on. Add 6 carrots, 4 bay leaves, 4 stalks of celery and a sprinkling of black peppercorns. Bring to a boil and simmer for 1 1/2 hours.

Dice the turkey meat into small cubes.

After 1 1/2 hours remove the carcass and all solids from the pot. Strain the liquid.

Put your vegetables back on the burner and return to medium high heat. Stir 1 1/2 cup of flour into the vegetables and cook for a few minutes to cook off the floury taste.

Start to pour in your stock.

Add any leftover gravy you still have. This is why I always make lots of gravy.

Stir in the cubed turkey.

Add 1 1/2 cups of long grained rice.

Add some freshly chopped parsley.

Stir in 2 cups of half and half.

Add some freshly cracked black pepper. Cover the pot and let it to simmer for about 40 minutes until the rice is cooked.

This is a wonderful way to use the leftover turkey. My daughter went to work this morning with enough of this to feed her whole office. Her co-workers wait all year for this soup.

This recipe made 8 quarts of soup.....2 went to work!
