Snow Piles

This is a really good cookie if you like chewy, dense, almond flavored cookies.

December 24th.


Mix 1/2 cup of butter with....


1 cup of sugar.


Add 6 ounces of almond paste.


Beat until smooth.


Add 1 egg. (I doubled the recipe that is why you see two eggs.)


Add 1 1/2 teaspoons of almond extract.


Add 1 teaspoon baking powder.


And 1/2 teaspoon of salt.


Put the paddle attachment on your mixer.


And blend in 2 cups of flour.


Beat until smooth and well combined.


Scoop it out into balls and place them on parchment lined cookie sheets.


Bake for 12 minutes at 350 degrees. Allow to sit and cool for about 10 minutes and then remove them to cool further on cookie racks.


Frost with this icing:

4 cups confectioners sugar
1/2 cup butter
1 teaspoon vanilla extract
2 tablespoons of milk


These are extremely rich cookies. But that is just what a cookie should be!
