Irish Soda Bread Recipe

Save this one for next year! Or make it today. I am a soda bread connoisseur having spent so much time in Ireland. And I have eaten a lot of awful soda bread. If you love soda bread this is the recipe for you. If you hate soda bread, this is also the recipe for you. And it could not be easier. I was given this recipe years ago from a friend that attended Ballymaloe Cookery School.

Pour 1 1/2 cups of buttermilk into the bowl of your mixer.

Add a teaspoon of caraway seeds, 3 tablespoons of honey and 1 large egg.

Mix this all together until you have a smooth liquid. With the mixer running, add 1/2 teaspoon of salt and 3 T. melted butter.

Add 3/4 cup of flour and as the mixer is running, add 1 teaspoon of baking soda. Make sure your baking soda date has not expired.

With the mixer running, add 4 more cups of flour. Mix it until it just comes together.

Shape it into a ball and place it on parchment paper on a cookie sheet.

Cut a large X across the top. This allows the wee fairies to escape during baking.

Bake in a preheated 350 degree oven for about an hour. Check for doneness by sticking a toothpick in the middle. When it comes out clean, it is done.

This is good slathered with Kerry Gold butter.

Recipe post marked. Thanks Diane
I'm getting rid of all my soda bread recipes and keeping this one. It even makes more sense. If I didn't have No Knead and Sour Dough Bread working right now I'd be making this today. This would be heavenly with just soup.

I do like soda bread but I´ve read that one shouldn´t eat to much of it since the baking soda destroys all the vitamin B in the flour. But every now and again I bake either a bread much like this or scones :-)

Have a great day now!
Christer.

Sounds great, though, I hate to admit I am not fond of caraway; do you know of a substitute? And I love your remark about the wee fairies!!

I don't do caraway either. Leaves a nasty aftertaste.

I've made some nice sodabread in my day
Looks luscious and Kerry butter, 'nuff said.

Happy Weekend!

Joyce, Kary told me about this, how wonderful it looked and it does. I'm hoping it will be ok if I just leave out the caraway seeds altogether. My husband likes it plain, darn.
I bet it always smells good at your house!

Made this bread today and it is absolutely amazing! I actually used half wholemeal (brown) flour and half white (mostly because I didn't have enough for it to be entirely brown. Anyway, great recipe, very easy to make 10/10 :) Will certainly be baking this again!
