Lasagna

Anyone want a bit of lasagna? I think I made enough for all of you! I certainly put the bolognese to good use.



I like to use an assortment of cheeses to give it depth of flavor. I used provolone, mozzarella, asiago, parmesan and fontina.


I always spray my lasagna pan with cooking spray so the noodles don't stick.


I use ricotta rather than a bechamel. It is really up to you as to which you prefer.


The noodles need to boil for about 10 minutes and you must be diligent about moving them around during this time so they do not stick to each other.


I heavily season the ricotta. I add 4 large eggs, salt and pepper, granulated garlic, Parmesan cheese and oregano.


I always add a layer of thinly sliced ham or prosciutto. This gives the lasagna a very rich flavor.


Rinse the noodles with cold water.


I place 2 layers of noodles on the bottom of the pan to start the assembly process.


The next step is to cover the noodles with some cheese. As the lasagna bakes, the cheese will melt and run into the noodles to create a stable base for the dish.


Time for a layer of bolognese.


Then more noodles.


And more cheese. Each time I add a layer of cheese I use a different cheese.


Then a layer of the ricotta and another layer of cheese.


Then I add sauce, cheese and ham. I add a whole layer of ham. I showed this with the one piece so you could see what is under it.




More noodles, more cheese and a layer of fresh basil.


One more layer of noodles and cheese topped with bolognese and sprinkled with Parmesan and asiago.


This bakes at 300 degrees for about an hour and a half. I used a very deep lasagna pan so if you use one which is more shallow, you would bake it for less time.


What? You say the lasagna is ready?


Well, I would like a little taste?

Too bad Teddy! Lasagna is not for puppies!

I might make a version of it without the ham and with veggie mince. What I love about lasagna is that it is lovely during hot season (because it is Italian?) but it can also be eaten when it is cold outside. With a hearty, fully bodied red wine.

Hope Teddy gets his taste of this mouth-watering recipe! I too use ricotta for it and bechamel for moussaka. Where ever did you find such lovely basil at this time of year?

I never thought of using a thin layer of prosciutto in a lasagna but my oh my if that doesn't look good. I think we'll have to make some lasagna soon

i made bolognese last night and we are making lasagna today.....

wish we lived closer...we could have a lasagna party !!!!!

I see that we do our lasagnas quite similar, but I´ve never used more than one kind of cheese but now I realize that it will be better with more kinds in it! I´ve never pre boiled the pasta either, perhaps the ones I use is sort of already pre boiled?

Honestly, in my entire lifetime (and I am an old woman) have I ever met as wonderful a cook as you. You don't even need to taste what you make to KNOW it's fantastic! Just watching you make it and seeing the ingredients is enough. This looks beyond delicious!

And I know what you mean, Teddy. .she temps us with gorgeous photos, and all I can do is like you, drool. . .

Now my dinner is going to seem so mediocre. I'm going to be yearning for some lasagna. It turned out beautifully, but no surprise there! Yum!!
This is by far the best looking lasagna I have ever seen. I wish I had a big piece right now! I better get busy tomorrow making the sauce.

I love to use different cheeses, too, and have come to adore adding Monterey Jack with Peppers mixed in with the Ricotta. But, you must have an army to feed up there 'cause I'd be freezing more than half of that pan. I have the same pan, so I know how big it is. Sure does look good and I think you should definitely share with Teddy. Come visit when you can.

Wow - that would definitely feed the 5000. I thought my mom's lasagna was amazing - but this looks like it would put her's to shame. I won't show her this post!
