First of all, I want to thank everyone for their comments yesterday. I really don't give a rat's butt what anyone thinks of me but it is rather annoying to deal with these twits! I changed my setting to not allow anonymous comments. I should have done that in the first place. And believe me, irreverence is my middle name. That bit on the Royal Family didn't even come close!
Anyhoo.....here is an easy recipe for another spring pasta salad.
You can use the small pearl mozzarella if you can find it. I used the cherry tomato sized ones and cut them in quarters. Don't use the big fresh balls because they are too soft.
Slice a container of cherry tomatoes in half.
Boil a box of orrechietta pasta in salted water.
Add six T. of olive oil.
Add 3 T. of white balsamic vinegar.
Add 2 tsp. of an Italian seasoning. I like Tuscan Sunset from Penzey's Spices.
Mix this all around to blend.
Drain and rinse the pasta with cold water to cool it off.
Add several tablespoons of fresh chives. Add one clove of grated garlic and stir to blend. Season to taste with salt and pepper.
Enjoy!

BTW...are you going to be going on any day trips soon? I like the blogs of your travels to thrifts stores or markets or the Amish country...love those, oh and of course your annual trips to Salem...always look forward to those in the fall. I live in big, boring SoCal so I look forward to these fun finds you get in the small, quaint towns.
I've never seen the pearls here, but it's a small town.
