This is a very good quick dinner recipe.
I saw a mushroom recipe the other day and decided to turn it into something more. I sliced up a bunch of mushrooms and placed them in a pan.
I added a bunch of capers, about 5 tablespoons of them.
I grated 2 large garlic cloves on a plane grater.
This is the best way to get your garlic evenly distributed. Add some salt and pepper, stir it to combine and dot with butter. I used about 5 tablespoons. Add 1/2 cup of white wine. Bake this in a 400 degree oven for 15 minutes.
Between plastic wrap, beat chicken until very thin.
Mix some flour, salt and pepper, granulated garlic and celery salt.
Melt some butter in a frying pan.
Dip the chicken in the flour mixture.
Fry until golden brown on both sides. Remove to a platter reserving the butter and browned bits. Add a few tablespoons of the remaining flour and whisk it for a minute in the pan.
Remove the mushroom mixture from the oven.
Pour it into the flour in the saucepan. Whisk this around over medium high heat until it begins to thicken.
Boil a box of angel hair pasta until al dente.
Put the chicken on top of the pasta and pour the mushroom mixture over the top of it.
I used chicken but this would be very good with pork tenderloin or veal too.
