I like making tuna sandwiches on whole wheat bread. This is a really good recipe.
Pour 3 cups of water into the bowl of your mixer.
Add 2 1/4 tsp. of rapid rise yeast.
Add 1/2 c. sugar.
Add 4 tsp. of granulated lecithin. This helps to keep your bread fresh.
Always store it in the refrigerator tightly sealed.
Add 1/2 c. canola oil.
Add 4 cups of all purpose flour.
Then 1/2 c. of vital wheat gluten.
Add 1 T. of salt.
Add 3-4 c. whole wheat flour.
Knead until you have a smooth dough. I split it in two to make it easier to knead. Place it in a buttered bowl. cover it with plastic wrap and let it rise.
Toast some walnuts in a pan.
Make some hard boiled eggs.
For this recipe I used 3 cans of tuna. Adjust the amount according to how much you want to make. Add some diced celery to the tuna.
Add some salt and pepper.
Add a medium diced onion.
Then add several diced carrots for crunch.
The walnuts give this a special flavor.
Look...I made a bread butt!
Punch the dough down after it has risen.
Divide it into 5 pieces. Place each piece in a buttered loaf pan and let rise until doubled.
Add the chopped hard boiled eggs to the tuna.
Stir in some mayonnaise. Don't use too much. I used about 1/2 cup.
When the loaves have risen, bake them at 375 degrees for about 25-30 minutes.
They should be golden brown. Cool on a rack.
A little lettuce is all you need for the perfect tuna sandwich.
Serve it with some pickles on the side.

I am diabled enough where cooking like I use to is not an option any longer. Can't stand on my feet that long..and and my walker... in the kitchen is so inconvinient.
