Here is another recipe I made from Bev at Beverly'sBackPorch. She has the best recipes and I seem to be making most of them.
You can buy a rotisserie chicken or roast one of your own. You can tell that I roasted my own by the look that Teddy gave me for several hours.
Roasted chicken is one of her favorites.
She got a lot of it.
Remove the chicken from the bones and cube it.
In a bowl, combine 1/4 cup of mayonnaise and 1/4 cup of sour cream.
Grate in the zest of one lemon.
Grate a knob of ginger and about 2 teaspoons of curry powder. Add some salt to taste. Add the juice from the lemon.
Dice a medium red onion, half of a large cucumber and a few stalks of celery.
Add 2 cups of cubed mango. To cut a mango, slice the side off and then slash the mango vertically and horizontally.
This is what Teddy did after the chicken was all gone.
Pop the mango backwards and cut off the cubes.
The skin should be concave.
Add the mango to the bowl.
Add some diced red pepper. Bev's recipe also calls for some sliced Napa cabbage which I made a point of buying and then completely forgot to add. The recipe is great either way.
Add some fresh cilantro and pour the sauce over the ingredients.
Serve chilled on some lettuce. The Bloch Tech and his father said this is the absolutely best chicken salad they ever tasted. You hit another one out of the park Bev!!! Thanks for another great recipe!

Teddy was so cute waiting for that roast chicken. l'il teddy loves it too. i buy him those rotesserie ones alot. when i walk in the door with it i better be ready to DROP EVERYTHING and get that chicken diced and ON THE PLATE FAST !!!!!
