Pasta Salad

I can't wait for pot roast weather. I don't think it will ever arrive. Do I sound like I am bitching about the weather a lot? I am. I don't care. This weather feels like a punishment and I didn't do anything wrong. Well, not lately anyway. I have been making lots of cold salads. Versions of this one have been all over the place so I thought i would give it a try.


Mix 1/4 cup of buttermilk, salt and pepper, 1/2 cup of mayo and 2 tsp. chipotle pepper together in a bowl.


The recipe calls for 8 oz. of smoked Gouda. I used it and some fresh mozzarella. Next time instead of the smoked Gouda, I would use another kind. Regular Gouda or even cheddar would be good.


Cut the cheese into small cubes.


Add it to the sauce.


Cut a pint of cherry tomatoes in half.


Boil a pound of the pasta of your choice.


Add a large bunch of chopped basil.


Mix it all together and add a bit more milk if needed.



I'd rather have pot roast.

Even though that pasta salad looks tempting its really hot soup weather over here. That and some of my home baked rye bread would be great today :-)

I am not big on the smoked cheese either.

It's gorgeous again here today; I am wearing a sweater. I think you need to move....

You have my deep sincere sympathy!!I Hate the heat.When it came time to retire, weather was a huge factor. That's why we ended up in the Pacific NW. I'll take rain any day compared to the heat! Only cool place we could find to visit was Alaska so here we are!.
it does look good....but i would rather have a pot roast in the oven too !!!!

I didn't know they passed a law of No Pot Roast In The Summer. Pot roast and your pasta salad sounds great to me. Cook your pot roast in the slow cooker so you don't have to turn the oven on.

We're on the same wave length - I was sweating out in the backyard yesterday thinking of Pot Roast! Now that I see Beverly's comment up above mine - who knew! Now to dig out the crockpot!

The goatmother is with Barb! No heat! Which is the same reason she ended up in the Pacific NW. Can't say as I mind it either. Here's hoping you have cool Halloween-like weather sooner than later!

Making lots of salad here too.... This looks like it is quick and easy to make and doesn't require to stand over heat too long. Very hot here too and I am looking forward to I hope a long autumn and a short winter.

I made a pot roast recently and a brisket. But I haven't made a pasta salad all summer. Going to have to try this. Looks yummy.
