Scallop Chowder

First, I must confess.....I was at the garden center when the gates opened at 7:30 this morning. I bought more mums. As if you haven't already figured it out, I have a bit of a problem. I am totally obsessive. When I start a project, I always get carried away. It drove me crazy not having a garden this year because of the stink bug problem, so I am making up for it now. It remains to be seen if not having a garden helped with the bugs. But, my friends had horrible gardens this year so I am glad I passed. I only bought 50 mums but I bought a bunch of other flowers. So, today is planting day again. And thanks to all of the rain wishes, we had a downpour this morning! Woohoo!

Back to the chowder.


First I made more buttermilk sandwich bread. This stuff is the best!


For the chowder, saute' a large diced onion in 3 tablespoons of butter.


Cut some new potatoes into small chunks.


Add the potatoes to the onions and cook for a few minutes.


Sprinkle in some dried thyme, salt and cracked black pepper.


Add 2 cups of seafood or chicken stock, a pint of cream and 3-4 cups of whole milk. Add 2 pounds of bay scallops.



Simmer gently until potatoes are cooked through....about 30 minutes. Do not boil!

Add 1/4 cup of Pernod. Or use some fresh tarragon. I used both. Don't skip this step, it makes the recipe.


I served it with some fresh sourdough rolls for dipping.


You could substitute a white fish like cod if you can't get scallops.

My Rare One went nuts one year with geraniums. She got some kind of a "deal" and the next thing I knew every pot and planter she could scrape together was sitting in our yard, bursting with geraniums.
Yes Ma'am, I could eat a pot full of the chowder and a loaf of bread. But...If I were there and you served this, I would have a single bowl and one slice of bread.

I love anything with scallops :-) But I´ve realized that I´m the only one up here where I live now days :-) :-) I guess that it helps growing up by the ocean :-)

I was just telling my husband this morning about you buying all the mums,, I wasn't being rude or anything,, just saying that you ahve a beautiul yard and um,,, that he should consider himself lucky I didn't have a yard,, ha ha .Sorry it was all good though.I've been reading your blog for years,,silently,, just started commenting when I started my own blog and understood how!I do speak of you often because we use a lot of your recipes,, so if you ears ever start burning just know that someone way up in Canada is talking about you,, all good though!!This looks like another winner and you make the best bread ever!! I would say keep going to the garden center until they post your photo at the front,, ( with a sign,, don't sell anymore to this woman),, have a great rest of your day!!
