Basil and Magazines

I got my Autumn Mathew Mead in yesterday's mail.


My basil is going crazy right now so I made a ton of pesto. I put about 8 cups of fresh basil in my food processor.


Then added about 3/4 cup of pine nuts and 6 cloves of garlic.



Then I added some blurry pepper and salt. As I pulsed the processor, I drizzled in about 1 cup of olive oil. It depends on how thick you want your pesto to be so you might add more or less.


When it was smooth, I scraped it into a bowl and stirred in 1 cup of grated Parmesan cheese. Taste it and adjust the seasoning if need be.

This was the consistency I was going for.


I placed it in zip lock baggies and froze it for winter.


This morning I ran to the grocery store and found Martha's Halloween magazine.


And I bought this one from Betty Crocker.


Halloween is less than two months away!!!

your excitement is addictive,, I've never saw that first magazine,,it must just be in the states.I have the other two and i love the pumpkins in Marthas, last year.I have never saw anyone make that much pesto at once,, you are a super woman in the kitchen,, (do you wear a cape,, my grandson wants too know) he's reading this over my should,, he's 11.He said he thinks Teddy is a beautiful dog and was she real,, she looks like a stuffed animal,, so funny.I told yes she is and has very sharp teeth,,(just in case he happens upon one) I remeber you telling us of their temperment, have a great day Joyce,I thought of you today at the grocerie store red, orange and green peppers were on sale for 1.29 a pound, they are usually alot more than that,, green are usually cheap but not red,, I'm trying your recipes today.

I would have to say that, hands down, Martha rules Halloween (and Thanksgiving, Christmas, Easter......) The Autumn magazines are the best of all. In your honor, today I am wearing an autumn pullover! and btw, toss me some of those autumn mini reeses!!

Basil hates me, it dies as soon as I look at it :-) :-) :-) Thankfully I can buy fresh one :-)

I want those magazines.

We had a basil plant here, christened "Basil" (well of course). It died after a few months.

I have kept Oct. magazines for several years. It's about time I get them out and have a look. Your pesto looks delicious!

I too have an over abundance of basil. I did not know I could freeze pesto. Thanks for the insight. I am counting the days until Halloween.
