Eggplant Gratin

I went to a local farm market and bought 2 of the biggest cauliflowers I have ever seen. They were 99 cents each! I also got two huge eggplants for the same price. Tomorrow I will show you what I did with the cauliflower.


I made eggplant gratin with the eggplants.


First make the the sauce. Dice a large onion. Saute it in a little olive oil.


Chop some large peeled and seeded tomatoes. Add them to the onions.


I added a bunch of chopped oven roasted tomatoes too because I wanted a more intense tomato flavor.


Add a bunch of fresh herbs.


Add 2 large cans of diced or crushed tomatoes. Add 1/4 cup of sugar.


Cook it over medium heat until it thickens. Remove the herbs and use an immersion blender to puree the sauce.


Cut the eggplant into 1/4 inch pieces and fry it in olive oil until it just begins to soften.


Drain it on paper towels and crack sea salt and pepper over it.


Coat the bottom of a gratin dish with some sauce. Place eggplant skin side up in a row. Place a thin slice of Gruyere or Swiss cheese against the eggplant and then add a layer of sauce to the cheese. Repeat until the pan is full.


Spread a bit more sauce over the top.


Bake it at 350 degrees until the eggplant is cooked through. It takes about 1 1/2 hours.


Sprinkle with Parmesan cheese. Let it sit to reabsorb the liquid then serve.

Ok, I don't mean to be snoopy, well maybe I do but you cook so much, do you freeze a lot of this and give to family or do you have still a big family at home.I know you have the handsome and talented blogtech and your daughter but you don't have other kids at home do you.You must have a wonderful freezer,,one full of goodies us mere mortals could only dream of.I full of questions,, are you a chef by profession?If I'm being to nosey please forgive,,I'm afraid I would weigh 200 pounds if I ate like this all the time,, mind you I would be one happy camper for sure!!I truly do admire your skills as a cook, you take everything just that little bit further.You should have a cooking show, that house of yours and your personality would be a win win situation,, I'd watch and a bet you would have a huge audience.OK, I'm through,, lol
As You know by now eggplant isn't one of my favorite things to eat. I always get the feeling I´m eating wet toliet paper :-) :-) :-) I guess I just don't know how to do it right :-) :-) But I guess squash is a good replacement.

Wonderful post, thank you for sharing. Oh you just gave me a reason to try planting some eggplant in the garden one more time next year. I was about ready to give up on it, it never grows for me. I bet your house always smells like wonderful food and spices!
that's it...i am getting l'il teddy and we are getting in the car heading east... i LOVE eggplant gratin... one of my most FAVORITE dishes....don't forget your chicken chewies teddy...it's gonna be a long drive !!!!!

The goatmother says Eggplant is one of her favorite things. Unfortunately we don't get enough heat to grow them here, so thank goodness for the store! Can't wait to see what you did with the Cauliflower. Did you cook it with squirrel? :)
