Hidden Candy Cane Cookies

My kitchen has the worst lighting ever. I just can't get good photos. Don't let the pics deter you from making these cookies though. These are new for me this year and they are keepers.

Put 1 1/2 cups softened butter in your mixer bowl. Add 1 large egg. 1 1/2 cup confectioners sugar, 2 tsp. vanilla extract and slowly add 3 cups of flour. This is a very nice dough to work with.


Chop up about 6 Hershey Candy Cane Cookies and beat them into the dough.


Take a walnut sized piece of the dough and wrap it around a Candy Cane Kiss and form it into a ball.


Roll each ball in some granulated sugar. Place them on cookie sheets and refrigerate until they are firm. Then bake them at 350 degrees for 10-12 minutes.


Cool on racks.


These are so good!


They are pepperminty, chewy on the inside.


With a crisp, sugary crunch on the outside.
