Crab Cakes

If you like crab cakes, try this recipe.


Pick over 1 pound of crab meat and remove any shell.


Add 1/2 cup of panko or crushed crackers and 4 T. diced parsley.


Add 1/4 C. of mayonnaise, 2 tsp. Old Bay Seasoning, 1 egg and 1/4 C. thinly sliced green ends from green onions. Add some cracked black pepper and 1/2 tsp. of salt. Mix this thoroughly.


Form into fat round cakes. You can do this by hand but I like using my cooking rings for this purpose.


I bought these on Curtis Stone's website. They come with this tamper to tap down the mixture into a compact patty.


Nice! Refrigerate these for 1 hour.


Brown them in 3 T. of butter mixed with 3 T. oil over medium heat.


Drain on paper towels.


I like to serve them over a simple salad with a vinaigrette dressing. I drizzle them with a cucumber dill sauce and sprinkle them with capers. Squeeze a wedge of lemon over them just before eating.

I could eat every one of those. Don't bother with the salad, but I do love the sauce. I love having leftover crab cakes to eat for breakfast.

I come from the East Coast, near the Bay. We have a Crab Cake Recipe that has been handed down through the generations. I will tell you, yours looks pretty good, though. I'm crazy about the capers on top. YUM.

I think your blog just might make a serious cook out of me yet! You hit a home run with this recipe. You've been out here often enough to know all about dungeness crab. When in season, I can get it fairly cheap. We have friends with crab traps , so when I'm really lucky , I get it free. I love it cooked in any way!!! Thanks for this recipe.
I'm not a big seafood eater but I do enjoy a nice crab cake from time to time. These look delicious!

If they were putting me to death and I got a last meal--it'd be crab cakes. Living in the desert, I dream about them all the time because I ate them growing up on the Chesapeake. When I travel anywhere near an ocean--I try to order them for breakfast/lunch/dinner. This recipe looks outstanding!

Miss my crab pickers. Wish I could just send it over to the daughter and have the crab returned, ready for baking. Alas, THAT is a one-way street. Love them, so gonna try this recipe and DUH! why didn't I think of using my cooking rings???!?!?! (Putting LARGE PRINT note on refrigerator...)
