Grilled Cheese Topped With an Egg

My kids love grilled cheese of every kind. I am always trying to come up with new combinations. This one was a big hit.


The secret to good sandwiches is layering. I like to add lots of flavors to a sandwich to make it really amazing. I used rye bread and spread it with a herbed mayonnaise, Dijon mustard and some pesto.


Then I spread on some of my oven roasted tomatoes.


I added some thin salami and some Gruyere cheese.


I added some Provolone and fresh spinach then spread the outsides with a bit of butter.


I sprinkled them with garlic salt.


Place them in a hot skillet.



Place something heavy on top to press them down. Keep and eye on them so you don't burn them.


You want them to be golden brown.


These were served for brunch so I topped them with a fried egg.


A complete brunch dish. Though my daughter took one home with her and ate it for dinner!

Wow...now that's a sammie! I love coming up with different grilled cheese combo's also...very creative!! I also like to throw together a bunch of different leftovers....lol!

By the way, what combo did you use for your herbed Mayonnaise, if you don't mind my asking?
I could eat a couple of these NOW. I think I'll use a little of your whole grain mustard on mine.

I love to have this as an easy lunsh on weekends and since I only bake rye bread that's what I always use :-)

I love how elaborate this is. My kind of sandwich.
I love love love grilled cheese sandwiches and I'm always adding new things to them. I love the egg on top! Yum!

Well it's late and I don't have the salami or Gruyere. But I've got everything else. Would make a nice midnight snack. I'll just call it an early breakfast. LOL LOOKS delish. Now if I just don't burn the bottoms.
