Lamb Chops with Roasted Root Vegetables and Israeli Couscous

This is a wonderful combination for dinner. Teddy had lamb for the first time and it is her new favorite! I bought these lamb chops at Costco and they were some of the best chops I've ever had. So, if you are near a Costco, check them out.

It is so simple to roast root vegetables. As they roast, their natural sugars caramelize and they develop a rich intense flavor. Cut up any combination of vegetables you like. I used carrots, turnips, parsnips, new potatoes and sweet potatoes. Toss them in a bowl with some olive oil and salt and pepper. Spread them on a cookie sheet and roast them at 425 until their edges begin to brown.

Now for the lamb chops.

Brush them with olive oil.

Crush some rosemary.

Sprinkle both sides of the chops with salt and pepper, granulated garlic and the crushed rosemary. Let them sit until they come to room temperature.

Follow the directions for your couscous. I like to use Israeli couscous because it is larger.

Add some chopped oven roasted tomatoes with a bit of their oil, some crumbled feta and sliced green onions.

In a heavy skillet, brown the chops on each side over high heat. It will take about 4 minutes on each side.

They should have a nice crispy golden crust.

A very flavorful simple meal.

I agree about Costco's lamb chops, they are delicious and reasonably priced. I also like couscous, especially the larger size Israeli. I roast veggies and combine them with the couscous. I eat way too much of that dish. xo
You have just prepared my favorite meal! I love any cut of lamb. I have to find a Costco within a hundred miles of me.

Costco does has good lamb. We are trading (hopefully) Thelma for a lamb and soon we will have lamb in the freezer. It's my favorite meat.

To long since I had lamb! Lamb isn't especially popular here so it is quite expensive and to be honest of low quality. But when I find some nice lamb I usually buy it :-)

LAMB is my FAVORITE meat. We have chops all the time. I use currants with mine. But yours look delicious. I had to chuckle about Teddy LOVING it too. A few years back, my cats discovered it too. I had put a Leg of Lamb on my butcher block cutting board to prepare it. I had to go answer the door. When I came back, both Dara and Mira were chowing down on the lamb, raw. Since then, we've found out they like it cooked too. LOL Going to make your couscous with my next lamb dinner. Take care.

LAMB is also my food, but it is hard to handle. I use a All-Clad 6110 SS Copper Core fry pan to cook them. Only for a very short time at low level heating on gas can bring you a best result
