Scotch Eggs

This is the simplest recipe and one of my families favorites. Make these for breakfast this weekend.


Buy a roll of your favorite brand of sage sausage. Hard boil 6 eggs. Divide the sausage into 6 pieces. Flatten each piece out and mold it around a peeled hard boiled egg. Notice I pointed out that you actually should peel the egg. Just sayin'!


Roll each one in breadcrumbs. I used panko.


Bake them in a 375 degree oven for about 30-40 minutes until the sausage is cooked through. Let them sit for about 15 minutes and then cut them in half and serve. Some people deep fry them but I think they taste better baked. You can also make these with hot sausage and serve them with some marinara sauce.


If you want to make these as appetizers, use quail eggs!

I had to look twice at your heading of this post, last week out of the blue "scotch eggs" popped into my head. I do admit my head is a labyrinth of (mostly)trivia. I never tasted them, I saw a recipe one time but couldn't remember if I still had the cookbook (I do). Your recipe sounds easy and tasty. xo

Love Scotch eggs and did them with ground beef heart mix, a while back. So easy. Don't know why we don't do them more often. And, I, too, prefer baking to frying -- seems to make up for the fat content in the sausage. Come visit when you can -- it's still summer, down here!

I've never eaten this and to be honest only heard about it once or twice in my life :-) Looks easy enough to do so why not try it :-)

I've never eaten quales eggs either but I guess they taste different from our common ones :-)

Scotch eggs (using Susan Branch's recipe) have become a Christmas morning favorite with the family! I have begun making my own sausage with ground white meat turkey, and that makes them really healthy. I chuckled when I read that we should be sure we peel the eggs.:)

Now these look very, very TASTY. I love sausage, but don't eat very much of it. But now that I've seen SCOTCH eggs, that is subject to change. Why do they call them that? No alcohol in them that I could see? Or is it a Scottish thing?

Scotch eggs are a British classic. I usually eat the veggie version, partially because it is not so easy to find genuinely good meaty ones: people don't make them anymore and buy them in shops and they taste cheap.
