Cashew Shortbread

If you like a good buttery shortbread, you will love these. This is a very easy recipe!

Place 1 cup of butter and 1 cup of sugar in your mixer bowl. Beat with the whisk attachment until blended. Add 2 cups of flour and beat until you have a crumbly mix. Add 1/2 cup of chopped salted cashews. Press this mixture into a 10 X 13 inch parchment lined pan.

Sprinkle 1/2 cup of cashews over the top.

Cover with waxed paper and gently press the cashews into the dough.

Remove the waxed paper and bake in a 375 degree oven for 25 minutes.

Remove and let cool for 5 minutes.

Cut the shortbread into squares and leave them in the pan to cool completely.

My husband and The Blog Tech almost polished these off in one sitting.

This is what the beets look like after 24 hours!

Oy. You're killin' me here. :)
If it were not raining cats and dogs I'd be at the grocery getting stuff for the shortbreads. They do look delicious. Tommorow is another day.

My beets are darker than that. I hope I didn't do something wrong. They taste wonderful so I don't care what color they are.

I've never even had the thought of putting cashews in any kind of bread :-) But I guess they would be perfect because of their mild taste and the fact that I love cashews :-)

Have a great day!
Christer.

That look splendid, although I might grind up a half cup of cashew flour too and add that. Just to get the creaminess throughout.
