Pickled Beets With Eggs and Onions

These are not canned.They are made to be refrigerated. They last for several weeks in the refrigerator since there is so much vinegar in them. The eggs get redder the longer they sit.


Boil 2 dozen eggs and peal them.


Boil 6 large beets until they are fork tender.


Slice 2 large sweet onions.



Pour 2 1/2 cups of cider vinegar into a sauce pan.


Add 1 1/2 cups of water.


Add 1 tsp. of salt.


Add 2 cups of sugar.



1 tablespoon of mustard seeds.


3 tablespoons of pickling spices. Bring this to a boil and whisk until the sugar dissolves. Let cool a bit.


Peel the beets and slice them into uniform slices. I sliced mine slightly less than 1/4 inch thick. Peel the eggs, some of mine were less than cooperative. Layer beets, onions and eggs until the jar is full.



Ladle the liquid with spices into each jar filling to the top. Refrigerate for 24-48 hours before eating.

I'm not a fan of pickled beets or eggs, but I think my dad could die happy if I made these for him. Not that he's in ill health, I'm just sayin' :-)

Wow! This reminds me of a PA Dutch food item. I love hard boiled eggs and pickled beets. I just need to get some nice Ball jars. xo
I hope everyone is making these. I just finished and they look beautiful. If I can stay out of them for a couple of days. My brother has already walked off with a jar of them.

I love pickled beets and I love eggs but I've never combined them like this. Pickled beets works great with all kinds of meat so I have it quite often. I've never pickled them myself though. Perhaps I'll try to do this if I find some beets!

As a die-hard Ukrainian wannabe, I love beets. I think I might give this recipe a try.

Last weekend we went to an Australia Day party and ate hamburgers "the Australian way" with a pineapple ring and a beet slice on top. We passed on the fried egg though.

I'm always wondering how do you know all this? I'm truly amazed at what I can learn from you. I love pickled beets and eggs, but I have always just bought a can of beets, thrown them in with hard boiled eggs and little vinegar and sugar and that's it. Now I must try these.

I HATE beets. Can't help myself or I would ADORE this recipe, just like all your others.
It's so funny because I make pickled beets...and hubby likes pickled eggs...he throws eggs into our leftover pickle juice, so now we can combine the two!
If you ever want to do just refer beets though...get Amy Sedaris's cookbook, I Like You...simple,great recipe for them and the cookbook is totally hilarious. You would love it...maybe you already have it!!

Don't know why but I just can't get a pickled egg down... doesn't make sense, does it? Can't believe I've found something you make that doesn't tempt me... Maybe I should see a doctor?!? But, they sure are pretty!
