If you think you can't make jam, you are wrong. It could not be simpler. And you can make very small amounts in no time at all.
Slice some strawberries. I like big chunks so I quarter them. Dice them smaller if you like more of a puree. Put them in a heavy pot.
Sprinkle in the zest of one lemon.
Sprinkle 1/4 cup of sugar over the berries. I used about a quart of berries.
Place the pot over a low heat and cover.
Stir occasionally and be careful to not let it boil over. Once it reaches the above stage, let it simmer for a while until it begins to thicken. It will thicken more as it cools. Ladle it into jars and seal tight with the lid. Sometimes these seal themselves. I make this in small quantities so I never bother to "put it up". This keeps for weeks in the refrigerator.
I made blackberry jam too.
Add lime zest to the blackberries.
I still only use 1/4 cup of sugar to a quart of blackberries and it is plenty sweet enough.

I get about 2 and 1/4 cups from a quart of berries. This is some of the best jam you will ever eat. This is wonderful served on the angel biscuits from yesterday.

This looks amazing, the blackberry is our fav!This wqill go lovely with those biscuits, my husband eats a piece of cheese when he eats his jam and biscuits. This would be supper for me, !!!
