Classic Macaroni Salad

 With summer approaching and my daughter bringing a very hungry firefighter home for the weekend, I dusted off some favorite classic recipes and whipped up one of our favorites.  Old time macaroni salad.


 Finely dice 1 large onion.


 Dice several stalks of celery and 3 large carrots.


 Squeeze in the juice of 1 lemon.


 I used 1 pound of small shells for this recipe.  Cook them in salted water until al dente.  Add about 1/2 C. mayonnaise (not miracle whip...UGH!).  Add 1/3 C. sour cream.


 Sprinkle 1 T. cracked black pepper, 1 tsp. salt and 1 T. celery seeds


 Add 6 chopped hard boiled eggs.  Sorry for the blur!  Cooking and taking photos with one hand can be challenging at times!  Mix it all around and taste for seasoning.  I add a bit of milk to make it creamier.  This is best made a day in advance.


It is a great side dish for summer meals.

I will post the other dishes I made in the next couple of days.  The very cute firefighter brought me a DC Fire and EMS hoodie!  Cool!!!

Oh I am with you on the Miracle Whip. ICK! Never liked it. Give me Hellman's (aka Best Foods) any day. The mac salad looks SO GOOD!!

yumm, my fav! I never put the hard boiled eggs in though, thats a great addition,
if you wear the emergency services hoody with your wrapped up hand you will look the part anyway, my husband hates mayo and will only eat mircle whip, ONLY1 I know he's a strange man, funniest thing is he never eats mayo, at least he THINKs he doesn't ha ha , I use mayo for all my salads, he never knows the diff but I would if I used mircle whip, take care Joyce and enjoy your daughter and beaus, visit, one thing for sure they will eat well, even with your hand layed up, you do amazing work one handed!

Ok, I did it, but I didn't have celery so I used a big bunch of freshly picked Italian parsley. I didn't have sour cream so I substituted yogurt. I picked a big fresh lemon and squeezed it into the hot pasta. I think that taste permeated. Now I've mixed it all and am boiling eggs to add later. I'll see if the taste sticks.

Both = yum!
I made Trisha Yearwood's "Crockpot Mac and Cheese" for work and they loved it. Very easy. Not as creamy as I like but very easy.
