Piyaz.....Turkish Salad

Claudia at: http://seasonalcookinturkey.blogspot.com/2012/04/piyaz-traditional-bean-salad.html has such good recipes. When I saw this one the other day I couldn't wait to make it. This is a traditional Turkish recipe.


Either use a large can of beans or prepare one pound of dried beans. I soaked mine overnight and boiled them the next day.


Add 1/4 cup of cider vinegar to the drained beans. This is very important as it flavors the beans. Let them soak in the vinegar for a couple hours stirring occasionally.


Slice a red onion very fine.

Place it in a bowl and sprinkle with salt. Squeeze the onions with your hands (or as I have been corrected....hand!!!) until they release their juices.


Rinse them with cold water and drain them on paper towels. Press out all the water.


Mix the onions with the beans and a chopped sweet long green pepper, 1/4 cup of chopped fresh parsley and lots of cracked black pepper. Sprinkle in a teaspoon of sea salt.


Add black olives and sliced hard boiled eggs. I also added strips of my Turkish roasted red peppers. Sprinkle with some dried sumac and some crumbled goat cheese. This is my new favorite salad!
