Potato and Green Bean Salad

This is a good alternative to your usual potato salad recipe.  My family loves this.

Par boil 1 pound of green beans.  Hard boil 6-8 eggs.

Cube some new potatoes and boil them until you can pierce them easily with a knife.

Dice 4 stalks of celery and 1 large onion.

Chop up some fresh chives.



Add salt and pepper to taste.

Add 1/3 cup of sour cream, 1/3 cup of mayonnaise and 1 cup of buttermilk.  Taste it and adjust the ingredients until you have the consistency you like.

Peel and chop the eggs and mix them in.  Chill until ready to serve.

Love this potato salad idea. I grow really long beans from seeds that my friend brought back from Bangladesh. They are purple, but cook up green. Waiting on them to grow, but I'm going to try them in this recipe - thanks!
