Spring Chicken, Basil and Orzo Soup

 I stopped at Sur La Table yesterday and look what I found on sale!


 The last thing I need is another knife but I could not possibly pass this up.  It's a sign.  A sign of what I do not know!

 I can't imagine anyone having cool weather since we have been melting in this ridiculous heat, but if you do, you might want to make this soup.  Why I am making soup in 95 degree weather I will never know.

 I made chicken stock but you can use store bought if you want to.

 Saute' a large onion in a bit of olive oil.  Add 3 diced carrots and 3 diced stalks of celery.  Add salt and pepper to taste.

 Add your stock and bring it to a boil. Add some orzo.  The amount depends on how much of it you want in your soup.  I added 2 cups to about 2 quarts of stock.  Add 2 packets of Knorrs Concentrated Stock.

 Add some diced chicken.  You can use a store bought rotisserie chicken if you don't want to roast your own.  Shred a bunch of basil and add it to the soup.

A very good bowl of soup.

We are finally feeling some relief last night and today from humidity and 90 degree temps. I love soup and occasionally have been known to make it during the summer just 'cause I really really wanted it. This sounds delish. I also think the cute pumpkin carving knife is a sign of a fabulous autumn and a very happy Halloween. ;-) xo

Well we do have cool weather now, but not that cool :-) :-) But a soup is never wrong to be honest.

I do like that knife! It looks like it's pumpkins printed on it, is it?

Finally stopped raining after 7 days so I and the goats are VERY happy!
I eat hot soup all year. What's the difference between hot soup and a plate of hot food. This looks wonderful.

Soup is such a complete food that it is good anytime of the year, in my opinion! In fact, I'd love a bowl of that soup right now!:)

I enjoy soup any time of the year, but I guess it depends of the kinds of soups. Minestrone I think is delicious during summertime. I love chicken soup, but I do prefer it more in colder seasons. Or on a rainy day.

But oh this soup looks delicious!

We have been having a cool-ish May. It has rained a bit and been a bit cooler than I would like it to be! My hubby is in Boston right now and he is feeling the heat!

That soup looks delish and I love that knife. BE CAREFUL!!

I have been so busy the past few days at work, thus the absence on the blogs. I was hoping to get a respite since I work with the hub and he is away but there seems to be no rest for me! I need some of that soup!

I've got chicken stock in the freezer, thanks in part to another chicken soup recipe on your website! Looks like my family will be having this soup for dinner one day this week. Tonight we made your fourth of July hotdogs and macaroni salad. The kids love those hotdogs!
