A Blueberry Cake for the 4th of July

 I have been making this cake for over 40 years.  The recipe itself is from 1886!
This is my families favorite cake.

 Cream 1 C. sugar with 1/4 C. of butter.

 Add 1 egg and 1 C. of milk.

 Add 3 tsp. of baking powder, 2  1/2 C. of flour and 1/4 tsp. of freshly grated nutmeg.  The nutmeg is very important to this recipe so do not skip it.  Stir in 3 cups of blueberries.

 Split the batter between 2 greased and parchment lined pans.

 Bake at 350 degrees for about 30 minutes or until a toothpick comes out of the middle clean.  Mine usually takes about 40 minutes.

 Remove from pans and let them cool completely on racks.

 While the cake is cooling, make the frosting.  Mix 8 ounces of cream cheese with 1/4 C. of light cream or milk.  Add 1 tsp. of vanilla and 1 cup or more of confectioners sugar.  Double the frosting recipe if you like lots of it for your cake.

 I used a patriotic plate for the 4th.

 This cake should be refrigerated because of the whole blueberries.

It is also very dense and moist.

Thank you for adding the "subscribe via email" gadget. Much appreciated. The blueberry cake looks wonderful. When I was little we never had blueberries, but had lots of things made from huckleberries. Now that I am an adult and love huckleberries, they are really hard to find unless you live in the Pacific northwest. Once upon a time you could buy them in the coal regions of PA but not anymore. I will definitely try this cake. The plate is beautiful. Is it English ironstone? I collect on a small scale - limited by the space of a 1 BR apartment. Really puts a cramp on things. I meant to tell you that I smile every time I see your blog because of the background - how I love weeping willows. The one in our backyard when I was little was the perfect fort.
Love the fact that its very vintage! It looks absolutely delicious!

This cake do look delicious! Thank god You have all the recipes on the side bar so I can go back whenever I need to :-) This will be done when the blueberries are ready here! I realized that I actually have a small pitcher that shows American measurements :-)

Most older cakes are dense. I guess we lightened them up as mixers came along and we just started eating lighter fare. It's a beauty of a cake for sure! Happy 4th

I have never ever saw a cake like this and we live in wild blueberry country, all along the shore of lake Superior!! I will have to try this but I can tell you right now I know its a winner!
