This and That Cookies

The funny name of these cookies comes from adding a bit of this and a bit of that. 
You will need:

1 C. butter
1 C. sugar
1 C. light brown sugar
1 C. rolled oats
1 Lg. egg
1 C. crushed corn flakes
1 C. vegetable oil
1/2 C. shredded coconut
1/2 C. chopped almonds
3  1/2 C. all purpose flour
1 tsp. baking soda
1 tsp. salt
1 tsp vanilla
Pecan halves

Cream the sugars with the butter.  Add the eggs, vanilla and oil and beat until combined.

Beat in the dry ingredients.

Place balls the size of walnuts on a parchment covered cookie sheet.  Press a pecan half into the center of each ball.

Bake at 325 degrees for 8 to 12 minutes or just until they begin to brown on the edges.  Cool on racks.  This recipe makes about 3 dozen cookies.

Looks really tasty! But I don't think I have half the ingredients at home :-)
Sometimes when I bake cookies I toss in what ever I have if I haven't enough of something, sometimes they get delicious other times I won't tell You how they taste :-) :-) :-)

The cookies look delicious, my husband would so love these. Geez, I really don't want to turn the oven on.

I'll be making gorp cookies soon for the hubby to take hiking tomorrow - same concept I think, whatever I have on hand I toss in the batter.

Nice! I like to do that too - look in the cupboard and just grab whatever is in there. It usually works, but sometimes not so much. Luckily I can send any cookie to my parent's house - my dad is not picky!
These sound wonderful, Joyce! Pecans are my favorite. How is your's been a couple of weeks or more and I am sort of lost in how fast time is speeding by. I know you said it was going to be awhile that you would have to wear the brace. Goes to show you just how much damage a bad cut can do. Your knives must be kept wonderfully sharp. (but of course they are!) :)
Anyway...hope you are doing alright. I was able to see the new great grandson..but we don't seem to be totally well yet. Energy level is really down. Otherwise...doin' GREAT!
