Zucchini Cakes

 If you are lucky enough to have an abundance of zucchini, this is a good way to use some up.  Kids like these too.

 All of the measurements depend on how many you want to make and how big your zucchini are.  This recipe is based on 2 medium sized ones.  Grate the zucchini and squeeze out the excess moisture with a kitchen towel.

 Dice 2 large stalks of celery.

 Grate 2 large carrots and a bunch of fresh parsley.

 Add 1 small grated onion and some minced garlic.

 I had some of my oven roasted tomatoes which I diced up and added.  You can skip this step if you want.

 Add some cheese. This is a good recipe to use up extra cheese which you have on hand.  Cheddar is very good in this.  I had Gruyere and Havarti I needed to use so that is what you see here.

 Add 2 eggs and about 1 cup of flour.  Add salt and pepper.

 Mix it together until it is the consistency to form patties. Fry in just a bit of olive oil in a non stick skillet.

 Drain on paper towels.

These a really good eaten cold too.

I didn't plant any zucchinis this year, instead I planted a couple of winter squash. But they don't grow especially well since it's been so cold. I'll have to buy a few to try this recipe :-)
