Best Pecan Shortbread Recipe

There is nothing quite like a good piece of shortbread and this recipe is outstanding.  It will make your house smell good too.  These are very easy to make.

Add 2 sticks of butter to your mixer bowl.

Add 1/2 cup of dark brown sugar and 1/2 cup of granulated sugar.  Beat this with the paddle attachment for 3 minutes. It will be light and fluffy.

Add 1 cup of finely ground pecans, 1 tsp. of salt and 1 tsp. vanilla.  Beat for 3 more minutes.  Beat in 2  1/2 cups flour.

Place it in an oblong pan and score.

Press a pecan half into each square.  Bake at 300 degrees for about an hour until they look dry.

This looks so delicious! Especially when one hasn't eaten for a long time :-)
Pecans aren't especially common over here but I guess walnuts can be used as a substitute. Not the same taste but still tasty :-)

Have a great day!

My Gentleman Caller would love these and they use a low temp which makes them perfect for solar cooking demonstrations! How cool is that?! Thanks for the recipe and come visit when you can.

Do you think these would still come out okay without being prepared in a mixer?
