The Best Chicken Roll Recipe

I know a lot of you were surprised to see how well Teddy eats so I will show you how economical it can actually be.

I roasted the $9.00 chicken I bought at the Amish market.  Teddy gets the healthy low fat breast meat as treats which lasts for 2 weeks.  I freeze half of it to take out for the second week.  Then I use all the rest of the meat to make another dish.  I boil the carcass with onions, carrots, celery and herbs to make stock.  I get about 3 quarts of stock from it.  So a $9.00 chicken goes a long way. This is what I made with the extra chicken meat yesterday.

This is a variation of ones I have shown before. I used my no knead pizza dough for the base.  If you want the recipe, click here:  http://octoberfarm.blogspot.com/2012/07/no-knead-pizza-recipe.html   This is seriously good pizza dough.  you can make it and keep it in a ziplock bag in the refrigerator for up to a week.

Roll out some of the dough and spread it with garlic butter.

Spread on some pesto.  Sprinkle the diced chicken over the pesto. Sprinkle on some crumbled bacon and some shredded cheddar cheese.


Roll the dough into a log and slice pieces about an inch wide and place them in muffin tins sprayed with cooking spray.  When I showed this before I baked these on cookie sheets. They work much better in muffin tins.  Sprinkle a bit of Provolone cheese on the top.  Bake at 400 degrees until golden.  About 25 minutes.  Kids love these. 

So do Blog Techs!  This made 2 dozen and I only used 2/3 of my pizza dough.  These all go to the neighbors today.

I love food that can be cooked like this and then frozen for later. Mmmmm. We are butchering chickens next week. I'll have LOTS of chicken to work with soon

I've never seen any kind of rolls (except for cinnamon rolls :-) ) over here. I wonder why because they are really practical and so tasty!

LOOKS so-ooo GOOD, these chicken rolls. My kitties loved roasted chicken like Teddy does. And they are very finicky. They only eat the white meat too. I don't give them alot, but they are so happy with what they get. They're crazy for LAMB too.

they do look good, my husband said your dog eats better than a lot of people, he was saying that as we went by a Macdonalds today, the line up was crazy long, we were discussing when I would be making your carmel apple pie (the one with lattice on top and carmel poured over) , my family loves that pie, then we were talking about Teddy, we miss our dog and Garry has become quite facsinated with teddy.Were your ears burning, lol, here we were driving through Amish country talking about you and Teddy!!

Good for Teddy! You give him low fat breast meat! I'm stuck with being very interested in all-things-low-fat. Sad hu????? ,-)

And Re: your comment of... People around you don;t bother with their yards... So you don't have to block out lots of yard machine noises, like I do. -sigh- Gooooood!!!!!!!

The regular people around us, don't do a lot of noisy yard work. They mow lawns when needed, etc. It's the summer estates of the wealthy, which are taken care of, with a wee bit too much care, we think. lol.

And our area-of-regular-homes, is adjacent to one of those biggggggg summer homes. Grrrr... :-)

One of my pet peeves... Leaf Blowers, or whatever they are called. Sooo Much Noise. Did anyone ever hear of yard rakes?????
Grumble... Grumble... Grumble...

Oh and RE: you last post about Pumpkins! I went to look, if our 'Sunny Side Gardens' had pumpkins out here, yet... Nope! Your area is ahead of ours! :-)

But I do look forward to when 'Sunny Side Gardens' becomes one GIGANTIC "Pumpkin Patch." :-)))) It is super!
