Apple Cheese and Ham Quesadillas and What I've Been Doing

Here is something a little different for breakfast or lunch. 

Melt some butter in a skillet.

Slice some sweet onion and apples thin.

Lightly saute' them in the butter.  Just for a moment or two.

Set them aside.
Melt a bit of butter in another pan.

Place some flour tortillas in the pan.

Sprinkle some shredded cheese on the tortillas.  I used Monterey Jack and Cheddar.

Add some of the onions.

Then some apples.

Top with more cheese.

Then another tortillas.

Fry until golden on both sides.

After I made these I realized they would be even better....

If I added some good ham from the smokehouse.  I fried it and then added it to them.

You might have wondered where I have disappeared to since The Blog Tech has been posting for me.  My daughter has an event at her museum tomorrow night so I have been cooking up a storm.  I made a huge batch of chile and made over 200 of these mini corn dog muffins to serve with it.  I have made dips, rolls, cookies shortbreads and more.  We are expecting about 100 people so a lot of cooking has been happening here.

You just make your favorite sweet corn bread recipe and drop it into mini muffin pans.  Spray those pans first!

Stick a chunk of Hebrew brand hot dogs in the middle and bake them at 400 degrees for 15 minutes.

These are killer good!  How perfect with a bowl of chili.

Here is one of the meat and cheese platters I made.  There will be mustard in the center when it is served.

Since The Blog Tech is on vacation, I am going there tomorrow to deliver the food and work the event with her.  The Blog Tech will post for the next few days and I will return this weekend with lots of photos.

oh my gosh those sound so good, what a great idea, have a good time, try not to work to hard, everyone will love the food, I'm sure they always do!! The blog tech is doing a wonderful job!!

I will definitely try the cornbread recipe. Kids would love that with chili this winter. Have fun.
