Intense Gingerbread Cake with Lemon Frosting


If you like gingerbread, this is the cake for you!

Place 1 cup of sugar in the bowl of your mixer.

Add 1 cup of molasses.

1 cup of vegetable oil.

Add 3 large eggs.

Add 2 cups of flour, 2 tsp. of baking powder and 1 tsp. each of cinnamon, ground cloves and powdered ginger.  Beat in 1 cup of boiling water,

Pour the batter into a greased 9 inch springform pan.

Bake at 350 degrees for 1 hour or until a toothpick stuck in the center comes out clean.  Set it aside to cool.

Beat 3 cups of powdered sugar with 4 tablespoons butter, 1 teaspoon of vanilla extract and the juice and zest of 1 lemon.  You can add milk to thin it to the right consistency.  I keep it in the refrigerator.

Okay. Can I just say that I truly love that you ice a cake like a queen, and not like a pauper?! I hate seeing cakes with a tiny little glaze on them. THIS is icing!

I do like these gingerbread cakes and makes it every now and again, but we swedes rarely have frosting on any cake. I don't know why but that's the way it is. I'll try this next time I make one :-)
