Here is another bread recipe you might like to try. It makes really good toast.
Pour 2-1/2 cups of milk in the bowl of your mixer. Add 1/2 cup of honey and 4-1/2 teaspoons of rapid rise yeast.
Add 2 cups of flour and 1 tablespoon of kosher salt. I also added 2 tablespoons of granulated lecithin to keep my bread fresh.
Add 4 tablespoons of melted butter.
Add 5 more cups of flour. Knead until you have a smooth dough.
Cover and proof until doubled in volume. Divide in half and place in greased pans. Brush with melted butter and let rise until the dough crests the pans.
Bake at 375 degrees for 35 minutes or until golden.
Cool on a rack.
The freckles on my bread are from not allowing the lecithin to fully blend in with the wet ingredients. I tend to forget to do that when I bake bread.
A nice chewy interior with a slightly crisp exterior.
