Creamy Roasted Garlic Spaghetti

 It seems like forever since I have posted a recipe.  It has been busy around here but I am still cooking a lot.  This recipe was a huge hit around here and so very easy to make.

 First you need to roast a head of garlic.  Just slice off the top of a head of garlic and place it on some foil.  Drizzle olive oil over it, pinch the foil shut and place it in a 350 degree oven for about 40 minutes.  After it cools a bit, squeeze each clove out of its skin and dice it up.  It should be very soft.  Save all of the olive oil too.  Dice up some fresh parsley.

 In a bit of butter and the roasted garlic olive oil, saute a diced small onion. Add more olive oil if needed.  Sprinkle with cracked black pepper and salt.

 Add a few tablespoons of half and half or cream.  Whisk it around and add 1 cup of chicken stock.

 Boil 1 pound of spaghetti until al dente, drain and mix in the sauce.

Serve it with some Parmesan cheese for sprinkling.

I could live on this stuff , honestly, this is my favorite way to have pasta, sometimes simple is best!! We grow our own garlic from bulbs brought over from Poland 60 years ago.Its the best garlic and it shines in this dish, well ours is very much like yours.YUMMY!!

I might use angel hair instead because I am so very fond of it.
Another recipe that I've known of but as usual, yours sounds better than others I've found. It's the little things... heh heh!
