Vietnamese Spaghetti

We have a favorite Vietnamese place we frequent and this is a recreation of a dish we order often.

Start by measuring 1 cup of soy sauce into a bowl.  Add 4 tablespoons of honey and 3 tablespoons of grated fresh ginger.  Add a bunch of fresh cilantro diced up.
Mix in 3-4 grated garlic cloves, 4 tsp. of rice wine vinegar and 5 tablespoons of toasted sesame oil. I like a bit of a kick to it so I add some hot sauce too. Add the hot sauce of your choice. Whisk in 1/4 cup of peanut oil.

Throw a few cups of fresh spinach in a bowl and add 1 pound of spaghetti cooked until al dente.  Shred a couple of carrots and add them to the bowl as well.

Add some green onions or 1 small onion sliced very thin.


Squeeze in the juice of 1 lime.

Toss it all together and serve it with a wedge of lime.  This would be good sprinkled with sesame seeds and served topped with garlic prawns.

That looks delicious. I've got to try it. I suffer from high blood pressure and will need to use a low sodium soy sauce, but I am sure it will taste just as good.

that is a pretty dish, sounds yummy but thats a lot of soy sauce!My husband has to watch his sodium, I guess I would have to eat it all!

I've found out that most Chinese restaurants actually is owned by Vietnamese people here in Sweden, so we mostly eat Chinese food in a Vietnamese style.

People who knows how real chinese food tastes says ours taste Vietnamese and nothing else :-)I don't care as long as it tastes good :-)

This sounds tasty. I would definitely have to use reduced sodium ingredients, though. Because of the level of sodium, we rarely use soy sauce. Just due to what has developed with us through the years.:(

You said your leaves are mostly gone now. Same here. My late day sun pics, were of the old pines, across the road. Glad there are still some of them left.

Although that little woods across the way, is getting pretty sparce, in spots. Can see a lot of standing water. -sigh- Too much for trees to grow in... When they do blasting for building, it diverts the natural water flow, etc.

Oh well, at least it's not a parking lot!!!
Reminds me of that ancient Joni Mitchel song.... With one phrase, I remember... "They paved Paradise, put up a parking lot..." :-)

Ooooo that looks very very very tasty!! A new "pho" place just opened up near my house to rave reviews from the local reporter at the Anchorage Daily News. I am headed over there today to get some spring rolls to try.
This sounds like something I would love but not my husband. I have never met anyone but him that does not care for pasta. S'ok. More for me!
