The cookie war continues. I think I am winning. I made these yesterday. Here is the recipe:
2 sticks of butter
1 C. sugar
1 T. vanilla extract
1/2 tsp. cinnamon
1/4 tsp. ground ginger
1/4 tsp. allspice
zest of 1 orange
1 egg plus 1 egg yolk
2-1/2 C. flour
Mix this all together and roll out to 1/4 inch thickness. Cut out wreath shapes and bake at 375 degrees for 6-8 minutes. Mine took 8 minutes.
Beat 1 C. of confectioners sugar with 1 T. spiced rum and 3-4 T. of heavy cream. Frost each cookie.
Press pecan pieces, dried cherries, dried cranberries, pistachios, raisins, candied ginger and hazelnut pieces or any dried fruits and nuts of your choice on to the wet icing. Let them sit until the frosting sets.
Rugelach and wreathes.
