Hidden Candy Cane Cookies

These photos are from last year.  I think I am suffering from cookie brain.  I forgot to take photos yesterday when I made these.  They sure are good and if you like peppermint, you should give these a try.

Mix 1-1/2 cups of softened butter with 1 large egg, 1-1/2 cup confectioners sugar, 2 teaspoons vanilla extract and 3 cups of flour.

Chop up 6 Hershey's Candy Cane Kisses and mix them into the dough.

Use a walnut sized piece of dough and wrap it around a whole candy cane kiss.

Roll the ball in granulated sugar.  Refrigerate them until they are firm.

Bake them on parchment covered cookie sheets for 12 minutes at 350 degrees.   They should just be turning golden on the edges.

Mmmmmm...

Cool them on racks.

A sugary crunch on the outside and creamy peppermint on the inside.  Santa loves these.

I don't like candy canes much as an adult, but if they were smooth like this I'd try one.
