Cole Slaw and Banana Pudding

I made a huge batch of cole slaw to top the pulled pork sandwiches I showed yesterday.  And a double recipe of southern banana pudding.

I've made many cole slaws in my life but this is still my favorite recipe:

1 head green cabbage (8-10 cups) I also used some red cabbage too.
1 large carrot,  finely shredded
2 -4 green onions or thinly slice a large onion
2 teaspoons celery seeds

DRESSING

1 cup mayonnaise
 1/3 cup milk
1/3 cup buttermilk
3 tablespoons white vinegar
3 tablespoons fresh lemon juice
5 tablespoons white sugar
1 teaspoon garlic powder
1 teaspoon seasoning salt
1/2 teaspoon fresh ground black pepper

Directions:

Slice the cabbage into fine shreds.

Transfer to a large mixing bowl.
Grate the carrots and add them to the bowl.
Chop the green onion or slice the large onion fine. Add to the bowl.
Mix the three veggies all together with a wooden spoon.
To make the dressing: in a medium glass bowl whisk together all the dressing ingredients.
Pour over the veggies in the bowl, and mix well to combine.
Store covered in the refrigerator. I put it in  aziplock bag so I can shake it around now and again.

I have to try this one too! Looks so good and I need a new cole slaw recipe. I make my cucumber salad with Hellman's Mayo, white sugar, & vinegar. Very good! An old "Taste of Home" recipe.

Yum! Love slaw with pulled pork! My mother made banana pudding the old-fashioned way with meringue. I have done it that way, too, but much prefer a simpler version.:-)
