Carrot Coins Salad

 This is a good old fashioned recipe.  I found 5# bags of carrots on sale for 2.99 a bag and remembered this recipe from long ago.  I had not made this in well over 40 years but is just as good as I remembered it.  The recipe I will give you is for 2 pounds of carrots since you don't need to feed the shelter!  Slice your carrots into slices a bit thicker than a quarter.  Add 1/2 cup of sugar and 1/4 cup of salt and cook the carrots just until they become tender.  Do not overcook.  Drain and rinse with cold water to stop them from cooking.

 In a separate pot, add 1 cup of sugar, 3/4 cup of apple cider vinegar, 1/2 cup of canola oil, 1 tsp. worcestershire sauce, 1 tsp. yellow mustard, 1 T. celery seeds and some salt and pepper to taste.  If you want a bit of spice, add some hot sauce.
Bring this to a boil and then simmer until the sugar dissolves.

Whisk in 1 can of tomato soup. Let this cool a bit.

 Slice 1 red onion and dice some green pepper. Toss this all together.

Pour the sauce over the carrots, mix well and refrigerate.  This gets better after a couple of days. Even kids like carrots this way!

I wish I had more old-fashioned recipes, from the days when people had and used fresh ingredients and cared about flavor...like this carrot salad. It looks pretty and delicious.
