Refrigerator Cucumber Salad

This is a fabulous salad and will be great to serve during hot weather.

I found cucumbers on sale 3 for 1.00 so I made this for the shelter.  I will give you the recipe in which you use 4 cucumbers.

Bring 2 cups of white vinegar and 1-1/2 cups of sugar to a boil along with 1 tablespoon of salt, 1 teaspoon of celery seeds and 1 teaspoon of red pepper flakes.  Boil it until the sugar dissolves then turn off the heat.

Throw in 2 cups of ice cubes and let them melt.

Thinly slice 4 cucumbers, 1 large red onion and 1 large green pepper.

Pack them tightly in a jar.

Pour the liquid over them and close the jar.  These will keep for a couple months in the fridge.  I tucked in some garlic cloves and fresh dill as well.

thats a beautiful jar of pickles, this made me think of Bev, Teddy leaves unusual tracks!
I love that but I'm brought up with bought one, a special brand and since I never get mine to taste like those I don't do it any longer :-)

I wish we just got a dusting like that, Teddy can't be too disappointed about the snow I hope :-)

Great looking salad and it keeps for months? Hmmmm, something I must try in the summer here.

Poor Teddy, darn snow should know better than to land in Teddy's bowl. I love your dog, give Teddy a scratch behind the ears for me!

I make a similar cucumber salad but without having to boil the marinade. Mine uses coarse pickling salt. It's super in the summer at a BBQ.

We call these Refrigerator Pickles where I hail from. I've used this recipe many times (or a slight variation of it) during the summer and fall to use up the cucumbers that are profusely growing in the garden, especially when one doesn't have time to can them. I've even given these away as gifts in the winter months.

OMG that is SO pretty, almost too pretty to eat. I have to ask, where DID You get the jar? It's so unusual and so pretty. Almost like it's perfect for that salad!

Now i'm off to work in some cukes to my garden plans, ha.

I LOVE cucumbers! This recipe sounds wonderful and very easy. Years ago there was a recipe made with cucumbers that used sour cream and had a slightly sweet taste and it was wonderful. Its a common recipe and I cannot find it anywhere. However..this one sounds great too. I shall try it.
