Vegetable Barley Soup

 I finally delivered the vegetable barley soup to the shelter yesterday.  This soup ended up being very complicated.  Though the vegetable stock had a wonderful flavor, I had to add water to it to increase the volume which, of course, diluted the flavor.  I ended up adding beef bouillon, Maggi, Vegeta and some tomato juice to add flavor.  I am not even sure what all I added but it turned out being very good with lots of flavor.

 I made upwards of 200 of these cheddar bay biscuits again.  I could make these and the cornbread every day and the shelter guys would never get tired of it.  As soon as I walk in and they smell these, they all come running.  The power of food!

This soup just screams for some fresh parsley but I was out.  I don't think the guys will even notice.  I am going to be making them a Valentine's treat and will post it as I go along.

I think the best soup comes from "a little of this and a little of that."
I always add vegeta too if this need spicing up.

Most food becomes delicious by adding a little bit of this and a little bit of that :-) The problem is to do it the same again if one wants too :-)

It's good to know thatb they get nutricious and tasty food at the shelter!

I never heard of vegeta, but I love beef barley soup and have found that a V8 vegetable juice (large can/bottle) makes a great base for the broth. Even the vege-haters do not know that they are getting their dose of veggies as they are making little piles of diced vegetables to one side of the bowl so they don't, heaven forbid, swallow one.

What means just as much to them as the food is the knowledge that there is somebody who cares. You are doing a great thing for these people, many of whom have no hope.
