Easter Dinner For The Shelter

This almost did not happen.  I was not planning on making Easter dinner for the shelter.  They get hams donated and they prepare Easter dinner for all the homeless and the elderly in the area.   They have tons of volunteers and they do this all on Good Friday.  I assumed it was all taken care of.  However, The Blog Tech was volunteering that day and he texted me telling me that all the guys were asking what I was making and when I would be bringing it.  So, I jumped into action and made my super duper ham recipe.  I thought halushki would be a good side dish and something a bit different for them.

 I sliced up all of the ham and made potato rolls so they could make sandwiches if they wanted to.  As it ends up, the homeless guys ate the regular fried fish that they pass out so this was the only ham they ended up getting.

 Then I made my mom's Easter rolls.  She always made these for us at Easter when we were kids.  First you make the dough:

1 cup milk
1/4 cup sugar
1 tsp. salt
2-1/4 tsp. rapid rise yeast
1/2 cup shortening
1 egg
3-1/2 to 3-3/4 cups flour
1 cup finely chopped walnuts

Mix this all together until you have a smooth dough.  Cover and let rise until doubled.  Roll this out into a large rectangle.

 Brush it with melted butter and sprinkle it with chopped walnuts.  Roll the nuts in using a rolling pin.

 Fold the dough into thirds. 

 Slice a 1/2 inch strip. Twist them from end to end.

 Tie them in knots and place them on cookie sheets.  Let them rest until they rise a bit.  Bake at 425 degrees for about 12 minutes.  They should just be starting to turn golden on the edges.

Place them on racks to cool and drizzle them with confectioners sugar icing.  These are some of the tastiest breakfast rolls ever.

We packed everything up and delivered it to the shelter for Saturday's dinner.  My daughter leaves today to start her new job tomorrow.  My son is going to dinner at his girlfriend's parents.  I am sick of cooking Easter food so we are going out to eat Korean tonight!

oh my gosh I laughed when you said you're going out for korean food, no flipping wonder,,,, you are the cooking queen, thats a beautiful meal and so good of you to do it on the spur of the moment, you're spoiling those fellows at the shelter, such a good thing you do.

Well I'm droooling! This just warmed my heart. I can only imagine how grateful people at the shelter would be to have a real Easter meal and not just fried fish. What a beautiful meal.

oh my gosh! i just went over the recipe for the ham! i cant wait to try it! i swear i could almost taste and smell it! i made a ham and it was really good to i glazed it with maple syrup. but cant wait to try this. and of course i never thought to trim the rin off... i know the shelter was happy! you are so thoughtful and caring! its wonderful how the blog tec helps out too. we still have huge amounts of snow.. hoping for a slow thaw though as flood concerns of course now.. i have the river right behind me but we have had dike work so hopefully will be ok.
