Breakfast Quesadillas

 I saw these on Ree Drummond's blog the other day and made them this weekend and thought I would post them in case you have not seen them.  First, dice up some peppers and onions. 

 I love the taste of jalapenos but not the heat so I remove all the veins and seeds.  All the flavor but no heat!

 Grate some cheddar and some Monterrey Jack.

 Saute the onions and peppers in a bit of butter.

 Beat some eggs and make an omelet.

 Make some pico de gallo by cutting up cherry tomatoes, jalapenos, onions, cilantro, lime juice and sea salt.

 Place a tortilla in a buttered pan and top it with some of the grated cheese. (I missed some picks again!)  Add some peppers on top of the cheese.  Place some omelet on top of the peppers. Add some slices of cooked bacon and some sliced avocado.

 Sprinkle with more cheese and top with another tortilla. Flip it over.


 Cook until brown and crisp.

Slice in quarters and serve topped with some of the pico de gallo.

Looks delicious, I know my husband would love it. Sunday breakfast sandwiches are a favorite here! This would be a welcome change!

I cooked today..several hours of chopping, dicing, grating, boiling, peeling, slicing, stirring, mixing, tossing and listening for the timer..not to mention setting the table, picking flowers, etc. etc. I'm worn out..and respect for you has just elevated 100%!! I am off to bed..dragging my tail and grumbling about now I know why I don't cook much anymore.
But..then I remember the faces..the reaching for seconds why I cooked for so many years.
It does have it's rewards, doesn't it??
