Banana Cake and a Vitamix

I had some ripe bananas I needed to use so I tried out this recipe I recently found for a banana cake.
 It's very simple, very quick and very good.
For the cake:

2/3 C.sugar
1/2 C. sour cream
1 egg
2 T. melted butter
2 ripe bananas smashed
1 tsp. vanilla extract
1 C. flour
1/4 tsp. salt
1/2 tsp. baking soda

Combine the wet ingredients until thoroughly mixed.  Add the dry ingredients and mix until blended.  Pour the batter into an 8X8 square pan and bake in a preheated 375 degree oven for 20-25 minutes.  Remove from oven and let cool completely.



 For the frosting:

4 T. butter
1/2 C. milk
1/2 tsp. vanilla
2-1/2 C. confectioners sugar

Beat together until smooth and frost the cake.


 I finally broke down and bought a Vitamix.  This is one hell of a machine!

 You really can't compare it to other blenders.  This thing liquifies fruit.  I don't care for thick smoothies but the drinks I have been making with this thing are thin and outstanding.

 I've been mixing fruits and vegetables to make healthy green drinks.

I have a lot more experimenting to do with this machine but so far, it is fantastic.  It even cleans itself!

You know by now that I love anything with bananas :-) I can almost smell it here :-) This I must try!

I've never heard of Vitamix before and started thinking of Weetabix instead, I don't know if You have it on Your side of the ocean but they make sereals :-)

that is a cake like what I make, mine is an old recipe, the sour cream makes it nice and moist along side the bananas, I have never heard of a Vita Mix, sounds great though, I don't even own a blender, I have a big mortal pestle though,
It even cleans itself? Has heaven arrived?

What a simple cake. I have to try it. I have never heard of a vitamix..interesting. I'm am still wanting a toaster like yours! biding my time and now you tell lme about this Vitamix maching. LOL

I make my smoothies with a stick blender and they are SO thick! Your vitamix sounds great and cleaning itself? Perfect! c

I love mine and use it practically every day. I make thick fruit smoothies with a handful of oats tossed in - breakfast in a glass! There's a nice recipe for gazpacho in the handbook.

I made this cake this past weekend and it came out flat as a pancake. I wonder if something was left out of the recipe? Maybe I should just stay out of the kitchen...?
