I made some Chilean Sea Bass for dinner the other day. It is one of our favorites fishes. |
It is so much tastier than store bought. I roasted it in the oven with olive oil and S&P.
I cut the bass into serving size pieces and dried them off.
I coated them with a mixture of chili powder, cumin, granulated garlic and onion and salt and pepper.
I also made some fresh herb rice pilaf.
I seared the fish in a cast iron skillet in a bit of olive oil until it formed a crust.
Just before removing it from the heat, I add a knob of butter and the juice of one lemon.
The fish was flavorful and crisp on the outside.
And moist and flaky on the inside.

Some Paleo books say, you can use some butter. How about that? And this recipe, is just a bit... Must show it to the Resident Chef.
