Fresh Fruit Salad with Honey Lime Mint Dressing

 I made a fresh fruit salad for the shelter yesterday.  I peeled and diced for hours.

 The shelter rarely sees fresh fruit.  When they do get some, it is in such bad shape that they often have to throw it out.

 I used pineapples, kiwis, blueberries, cantaloupes, mango, papayas, oranges and bananas.

The dressing is made with lime juice, fresh mint, orange juice and honey whisked together in a blender.

What patience you have! Yes, chopping that fruit would take hours and hours! Such a treat for them!

Mmmm. Out here people would bring in apples, cherries and whatever grew for the food bank which was very much appreciated.

I'm going to the super market tomorrow and I'll buy lots of fruit and ice cream :-) I made it from canned fruit the other week but that's really not the same!

Joyce..that is one beautiful fruit salad. Not much is missing in it.
The dressing...I have got to make some of that dressing. :)
I just love fruit salads. Here the strawberries are real good now, so strawberries and cream it will be for us.
