Potlatch Copper River Salmon on a Cedar Plank

Potlatch is one of my favorite ways of cooking. It is absolutely my favorite way to prepare salmon.  It is done on a cedar plank and is seasoned with Potlatch seasoning which is a combination of salt, paprika, crushed red pepper, chili powder, oregano, basil and coriander.

Copper River Salmon season is just about over here.  We eat it often when it is in season.  Teddy loves it too.


You can make you own seasoning or buy it from William Sonoma.  Their's is excellent.

All you do is sprinkle some on the salmon.


Place the salmon on cedar planks which have been soaked in water for at least an hour.

Bake them at 400 degrees for about 20 minutes depending on the thickness of your fish.


I served it with sauteed garlic spinach and Israeli couscous.

Looks delicious! But I doubt they sell anything made of cedar here, nothing that grows on this side of the ocean I think.

Salmon is my GO TO fish. LOVE it. Have never cooked it on a cedar plank, myself. But have had it that way in restaurants. YOURS looks GREAT.

Ahhhh......now I think I have figured out where you are. LOL LOL Copper River salmon on a plank is the absolute best. I've had a lot of it while boating in the San Juan Islands.....yummm!!

You have more good salmon recipes than I do!! I love the use of that word Potlatch. Out here it also is the word for a gathering of the NW tribes. Kind of like a big party!
Joyce, I still say you are the most amazing of women! You write of recipes that I have never heard of in my life. Just reading your blog has been one of the most enlightening experiences when it comes to food and the preparation. What a joy it is to come here! I love salmon and even if I don't have the boards..I am getting that seasoning and doing the best I can.
